My dad has aquired a baritone uke made by a local luthier. This Uke was commisioned for someone else but never paid for. It was made as a baritone originally but the guy who ordered it didn't like the Uke so the luthier put extra machine heads in, changed the nut and bridge and strung it as a six string guitar.

It sounds lovely I must say, but I do feel the neck is too narrow to comfortably play as a 6 string guitar.

Dad's talking about stringing it back as a baritone uke again, changing the nut and bridge back to four strings (well, the luthier would do that). This would leave unused machine heads.

What I've been wondering is, could he string it as a six string baritone uke? This would still need a nut and bridge change to string the courses close together but it would utilise all the machine heads.

Can a baritone be strung six string?

I know a professional Hawaiian entertainer, Lopaka Young, who plays a 6-string baritone uke. After getting the nut replaced with the proper one for a 6-string baritone, the tuning of a 6-sting baritone would be modeled somewhat like that of the 6-string tenor, with the doubled courses on the G (with an octave-G) and the E (a regular unwound E, with a wound low-octave E):

Above is a photo of the Lanikai 6-string tenor uke, so that you can see how the strings are spaced in that configuration. 

You may or may not like the resultant string spacing and sound (due to the 2 octave strings). There will still be 6 strings, however, and there will be less room between the strings as on a regular 4-string baritone, so the fingering will take some getting used to. (I had played 12-string guitar for years, so adjusting to my new 8-string tenor uke was no problem.)

Another option you can explore is to simply remove the middle set of tuners, patch and refinish the headstock, and re-string the instrument as a 4-string tenor.
