Hal,

To my knowledge, no one makes a 5-string baritone ukulele.  The closest thing might be the Mexican vihuela, which is closer to a small guitar in size.  Its five nylon strings are tuned like the first five of a guitar, but with the fourth and fifth tuned up an octave, ukulele-style.

The Mexican vihuela is used by mariachi groups. It is played with fingers strumming open chords on the fretted part of the neck.

Tuning: adgBE --The A, D, and G are tuned one octave above a guitar.

I suppose you could make a 5-string baritone by retuning a vihuela to ADGBE, without the octave strings. 

However, the vihuela only has 4 frets, and a thick, rounded back, so it may not serve the purpose you intend for it.

Hi you could buy a half sized acoustic guitar take the the 6 string off or ignore it and tuen the 5 too G.  I,ve tried thie with a steel strung baby guitar and it seems to work.  Finger picking is probably best as strumming some of the 4 note baratone uke chords are changed ie A becomes A7.  There was a 5 string guitar and lute in the past but not sure of the tunings.  Best wishes and have fun.:cool:

Hohner makes a $39 half-sized classical guitar with a scale length of about 21" - this should be about the right size:
